Let’s Make A Smash Cake!
Can you believe it’s already our little one’s first birthday?! I still don’t know how a full year went by so quickly. The weeks leading up to Bennett’s first Birthday were…emotional for me to say the least. I am so happy my little guy is growing big and strong but I swear he was just a newborn yesterday! But here we are a year later and it’s time to celebrate his birthday as much as I possibly can despite the fact that he won’t remember any of this. When I was planning his party of course I knew I wanted a Smash Cake. Smash Cake’s are so much fun and I just love watching videos of little one’s tearing apart their little cake. That being said, I still wanted to make sure the cake was somewhat healthy as I wanted to let him enjoy as much as he wanted. So I worked on a recipe that has no added sugar and uses Almond Flour as opposed to regular Flour. This recipe is so easy and tasted great! Hope your little one loves it!
Ingredients:
Three Cups Almond Flour
Three Eggs
One Teaspoon Vanilla Extract
Two Teaspoons Cinnamon
One Teaspoon Nutmeg
One Cup Fruit Puree (Two Bananas, Five Strawberries, Eight Raspberries)
How To Make It:
Start by pre-heating the oven to 375 degrees.
In a large bowl combine your Almond Flour, Eggs, Vanilla Extract, Cinnamon and Nutmeg. In a blender add your Bananas, Strawberries and Raspberries. You can use your little one’s favorite fruits, you will need one cup of Fruit puree.
Combine the Fruit puree to the rest of your ingredients, add additional puree as needed.
Pour the batter into oiled baking dishes. This recipe makes two six inch round cakes.
Bake the cakes for 23-25 minutes, let cool, frost with your favorite icing and enjoy!
