Let’s Make Banana Pancake Bites!

This might be my new favorite Baby Led Weaning Breakfast recipe because of how simple it is! Plus I love any recipe that is Vegan so that I can sneak a couple for myself. This recipe requires minimal ingredients, is egg free, and makes super yummy Pancake Bites that your entire family will love. My little guy loves these so much I often have to give him a couple extra after he has finished his breakfast, that’s definitely a win for me!


Why Bananas?

Bananas are one of the best baby led weaning foods. Not only for its sweet taste and easy to eat texture but also for its high nutrition. Bananas are of course high in potassium but also have several key vitamins and minerals such as B6, C, and Manganese.


Ingredients:

  • Half Cup of Flour *I recommend All Purpose Flour or Oat Flour

  • Half Cup of Milk *I prefer Almond or Coconut

  • 1/2 Teaspoon of Baking Powder

  • Two Tablespoons of Applesauce

  • One Teaspoon of Cinnamon

  • Half a Banana


How To Make Them:

Let’s Start By Making Your Batter. Combine your Flour, Milk, Baking Powder, Applesauce and Cinnamon in a bowl. Now peel your Banana and cut it into slices. This recipe will make enough batter for about half of the Banana but you can double it to make more or just enjoy the other half of the Banana on it’s own. Then get out a pan, add some butter or non-stick spray and put on medium heat. Now you can place one tablespoon of Pancake batter onto the pan, top with one Banana slice, then add another teaspoon of Pancake Batter. Let cook on each side for about three minutes and they are all done! Hope your little one likes them!
