Let’s Make My Little Guy Some Dinner!
This easy and nutritious dinner is one of my little guys favorite meals to make and it only takes me about 15 minutes total. We absolutely love using Lentil Pasta as opposed to traditional Pasta for the added nutritional benefits, did you know that lentil pasta contains about 12 grams of Protein per serving?? I promise I am working on a Tomato Sauce recipe but for this quick and easy dinner I used an Organic, No Salt Added Tomato Sauce that Bennett loves (I get it from Sprouts). The Green Lentil Pasta is from a brand called Explore Cuisine and in my opinion it is the best brand for Lentil Pasta, when you let this pasta overcook for 3-5 minutes it because incredibly soft and easy for my little guy to eat. Please remember that Bennett is almost a year old so make sure your little one is ready to eat Pasta before offering it to them.
Why Lentil Pasta?
Red or Green Lentil Pasta is a delicious and nutritious alernative to traditional pasta. In just one serving of the pasta (2 ounces) there are 12 grams of Protein. Lentil Pasta also contains a good amount of Iron, they are naturally Gluten Free and they are Organic (Explore Cuisine Brand). I think that Lentil Pasta has a very similar taste and texture to traditional Pasta, especially with sauce added your little one won’t be able to notice a difference!
Ingredients:
Two Cups of Lentil Pasta (Green or Red)
Two Cups of No Salt Added Tomato Sauce
Two Tablespoons Olive Oil
1/4 Cup of Grated Zucchini
1/4 Cup of Chopped Spinach
1/4 Cup of Chopped Broccoli
Two Tablespoons of Parmesean Cheese (Optional Topping)
How To Make Them:
Start by boiling some water for your Lentil Pasta. Once that is boiled add in your Lentil Pasta, remember to let it overcook by a few minutes so it is nice and soft for your little one to eat. While that is cooking let’s prep our veggies. First you can peel and grate about half a Zucchini (You will want about a 1/4 Cup). Next you can chop up some Spinach and Broccoli, again you will want about a 1/4 cup of each.
Once the Pasta is cooked drain it and set aside. In a pan add two Cups of No Salt Added Tomato Sauce, Two Tablesppons of Olive Oil and your Veggies. Let that simmer for about 5 minutes on low heat. Going back to our pasta, I like to chop my pasta into smaller pieces, this is optional and depends on your little one’s eating skill level. Now you can add the sauce and veggies on top and it is ready to eat. You could also add a few Tablespoons of grated or shredded Parmesean Cheese on top. Hope your little one likes it!
