Let’s Make Some Apple Pie French Toast Rolls!
This is such a fun recipe and an easy breakfast idea for your little one if you are interested in switching it up. My toddler definitely gets tired of the same things for breakfast so I was trying to find new breakfast ideas that would be quick and easy to make during my busy mornings. I saw a similar idea when scrolling through Facebook and had to try my own version. These are nice and sweet with minimal added sugar and they are super soft in texture and should be easy for your little ones to eat.
Ingredients:
One Apple
Two Teaspoons Coconut Sugar
½ Cup and One Tablespoon of Almond Milk
One Teaspoon of Butter
One Teaspoon of Vanilla Extract
Two Teaspoons of Cinnamon
One Egg
Two Slices of Bread
½ Teaspoon of Lemon Juice
How to Make Them:
First let’s make our Cinnamon Apples. Peel and dice one large Apple. In a bowl combine your Apples with one teaspoon of (Coconut) Sugar, one tablespoon of (Almond) Milk, ½ teaspoon of Lemon Juice, and one teaspoon of Cinnamon. Mix together until Apples are thoroughly coated.
In a pan add in one teaspoon of Butter and let melt. Then add in your Apples, cook on low to medium heat for about 5-7 minutes or until Apples are soft.
While those are cooking grab another bowl and combine one Egg, ½ cup of (Almond) Milk, one teaspoon of Vanilla Extract, and one teaspoon of Cinnamon. Set aside. Now take two pieces of your favorite bread, cut off the crusts then take a rolling pin and flatten (I may have used a wine bottle because I couldn’t find a rolling pin).
Once your apples are done remove from the heat and let cool for two minutes. Add 1-2 tablespoons of the apple filling and add on top of a slice of the flattened bread. Roll the bread over the apple filling. Dip the roll into the French Toast batter then place the roll onto a pan or griddle on low to medium heat.
Cook for 2-3 minutes on each side. Top with some Maple Syrup and enjoy!
