Let’s Make Some Apple Pie Waffles!

Nothing makes me think of the holidays more than Apple Pie so as soon as November hit I knew I wanted to make at least a few recipes using Cinnamon Apples. Cinnamon Apples is something I made for Bennett in his first few months of Baby Led Weaning and he always loved them. They are super soft, easy to make and have no added sugar. I had this idea to combine my Cinnamon Apples into a breakfast and I made these super yummy Apple Pie Waffles. These are easy to make, tastes great, and the entire family will love them! An extra bonus is that they will make your kitchen smell wonderful!

Ingredients:

  • One and a Half Cups Flour

  • One Teaspoon Baking Powder

  • ¼ Cup Applesauce or One Egg

  • One and ¼ Cups Milk of Choice

  • Two Teaspoons Cinnamon

  • ½ Teaspoon Nutmeg

  • One Teaspoon Vanilla Extract

  • 1/4 Cup Coconut Sugar

  • One Tablespoon Lemon Juice

  • Two Tablespoons Butter

  • One Apple *I prefer Macintosh

How To Make Them:

Let’s start by making our Cinnamon Apples. Take one Apple then peel and dice it. Add into a bowl with your Lemon Juice, one Teaspoon of Cinnamon and ½ Teaspoon of Nutmeg, mix together. In a pan add in two tablespoons of Butter, I use a Vegan Earth Balance Butter. Put the pan on low to medium heat and let the butter melt. Once melted add in your Apples along with ¼ cup of milk of choice, I prefer Almond or Coconut Milk. Add a lid on the pan and let this simmer for about ten minutes, you want the liquid in the pan to dissolve and you want the apples to be soft.

While that is cooking let’s cook our waffle batter. Start with your dry ingredients: Flour, Baking Powder, one teaspoon Cinnamon, and Coconut Sugar. In another bowl combine your wet ingredients: one cup of Milk, ¼ cup of Applesauce or one Egg, and one teaspoon of Vanilla. Combine your wet and dry ingredients and mix thoroughly. You can either add your cinnamon apples directly into the batter or you can make a stuffed waffle by adding a scoop of batter into your waffle maker, then a scoop of the cinnamon apples, then another scoop of batter on top. Cook in your waffle maker until they are cooked throughout. Top with some extra cinnamon apples and enjoy! If you don’t have a waffle maker these also make great pancakes!
