Let’s Make Some Baked Cauliflower Bites!
You know I love recipes for the whole family and this is one of our favorites! These Baked Cauliflower Bites are the perfect snack or appetizer and they are completely vegan. I chose to top these with a little bit of Teriyaki sauce (try to find a low sodium option), but you can make them without a sauce or choose something else. These have a nice crunch but are super soft on the inside. I have actually made these twice already this week we can’t get enough! Cauliflower is super healthy, it 8/ high in Fiber and is a watery vegetable meaning it is very hydrating. It also has a decent amount of Vitamin C and Vitamin K. Ingredients:
Three Cups Chopped Cauliflower
One and a half Cup Panko Breadcrumbs
3/4 Cup Flour
One Cup Milk of Choice *I prefer Almond or Oat Milk
Two Teaspoons Garlic Powder
One Teaspoon Paprika
Add any other additional seasonings you like!
Two Tablespoons Avocado or Olive Oil
Optional: Three Tablespoons Teriyaki Sauce
How to Make Them:
Start by preheating your oven to 425 degrees Fahrenheit. Next, chop about three cups of Cauliflower into bite sized pieces. Now make a wet and dry batter in two bowls. The dry batter will be a cup and a half of Panko Breadcrumbs. The wet batter will be the milk, flour and seasonings.
Use a fork or clean hands to dunk your Cauliflower bites into the wet batter then coat in the Breadcrumbs. Place on an oiled baking sheet and coat the Cauliflower bites in a small amount of Avocado or Olive oil. Bake for 15-18 minutes then flip over and bake for another 15-18 minutes. Let cool, top with a few tablespoons of your favorite sauce (I used Teriyaki sauce) and enjoy!
