Let’s Make Some Baked Cinnamon Butternut Squash!
I wish you all could smell my kitchen after I made this!! I am so excited about this recipe for so many reasons, it is super healthy, delicious and only has FOUR ingredients! I am also proud of this one because Butternut Squash was the first food that my little guy didn’t like when he first tried it. He has never been a picky eater but that was one food that he wanted nothing to do with. Turns out if you bake it with some Cinnamon it becomes his new favorite food. He couldn’t get enough!! I hope your little one likes it as much as mine does!
Why Butternut Squash?
While I am personally not a fan of it, I really wanted my little guy to like Butternut Squash. First of all it is a really inexpensive food and just one will make enough for the entire family or enough to stock in the fridge to use for a few days. It is also a great texture for baby led weaning, when it’s baked it gets really soft and easy for them to chew. And of course Butternut Squash is incredibly healthy, just one cup of Butternut Squash has almost 7 grams of Fiber! In addition to being high in Fiber it is also loaded with Vitamin A.
Ingredients:
One Butternut Squash
Two Tablespoons of Olive Oil (May need more depending on the size of the Butternut Squash)
One Teaspoon of Nutmeg
One Tablespoon of Cinnamon
How to Make It
Start by preheating your oven to 375 degrees Fahrenheit. Next you can peel and chop your Butternut Squash, I chose to cut it into large slices but you can cut it into cubes if that’s easier for your little one. Next you can grab a large bowl and add in your Squash, Olive Oil, Nutmeg and Cinnamon. Mix everything thoroughly. Lastly we can get this placed on an oiled baking sheet and put into the oven for 20-25 minutes or until they are super soft and easy to eat.
