Let’s Make Some Broccoli, Egg, and Cheese Bites!
I think it is safe to assume that if you are a parent, you are probably pretty busy! As a mom who also works full-time and runs a blog on the side, I certainly understand the struggle of just not having a ton of free time to plan out and cook meals for my family. Because of my busy schedule I LOVE recipes that are quick and easy for me but also yummy and nutritious for my little guy. This recipe checks all the boxes because it is also a great one for the freezer. I have a stash of these bites in my freezer at all times and on those nights when I just don’t have time to prepare a full meal, I always have these as a go-to. These have protein and calcium from the egg, cheese, and almond milk and some great nutrients from the Broccoli.
Why Broccoli?
Broccoli is one of the best vegetables out there in my opinion. Not only is it yummy and super versatile but it has lots of vitamins and nutrients. Because of that, I try to sneak it into many of my recipes. Broccoli has a great amount of Vitamin C which will benefit your little one’s immune system. It is also rich in Vitamin A and even has some Iron in it, both of which are extremely beneficial for our growing babies.
Ingredients:
Three Eggs
One Cup Finely Chopped Broccoli
1/4 Cup Cheddar Cheese Shreds
Two Tablespoons Unsweetened Plain Almond Milk
Garlic Powder
Paprika
How To Make Them:
Start by finely chopping your Broccoli, add that into a bowl with your three Eggs, Cheddar Cheese shreds, Garlic Powder, Paprika and Almond Milk.
Mix everything together then pour mixture into mini muffin tray. Bake at 365 degrees for 8-10 minutes and they are all done!
To reheat these wrap them in a damp paper towel and microwave for 30-60 seconds (May need more time if reheating many at once).
