Let’s Make Some Broccoli Quinoa Tots!

This is one of those recipes that makes me super excited as a mom because they are delicious but also have some super healthy ingredients. I have been looking for a fun way to incorporate Quinoa into a Baby Led Weaning recipe and I already had a great recipe for Broccoli Tots so I decided to combine the two! It’s also a recipe that my son and my husband both enjoy which is also a huge win. These are super easy to make and with the Broccoli and the Quinoa they are incredibly nutritious as well.
Why Quinoa?
Quinoa is a superfood, it has some amazing health benefits and is one of my favorite foods. Quinoa is rich in Protein and Fiber, two very important nutrients for our growing babies. It is high in important minerals such as Magnesium, Potassium, Zinc and Iron. I also love that quinoa is gluten-free so a great option if your little one has an issue with gluten.
Ingredients:
One Cup Chopped Broccoli
One Cup Quinoa
One Egg
Three Tablespoons Breadcrumbs
1/4 Cup Shredded Cheese
Garlic Powder
How to Make Them:
We can start by pre-heating your oven to 350 degrees.
Next let’s cook our Quinoa. Take one cup of dry Quinoa, rinse it, then add it to a pot with two cups of water. Bring the water to a boil then turn down the heat, cover the pot and let it simmer for about 15 minutes. This will make more than you need for this recipe so save the rest for another time!
Now we can chop our Broccoli, I am only chopping the tops of the Broccoli to avoid any large chunks. In a food processor add your Broccoli, one cup of Quinoa, 1/4 cup of shredded Cheese and Garlic Powder. Pulse until smooth.
Place your mixture into a large bowl and add your Egg and your Breadcrumbs. Mix everything together.
Mold into tots and place onto oiled baking sheet for 10 minutes, flipping them over half way through.
