Let’s Make Some Cheesy Quinoa Bites!
If you couldn’t already tell, I love using Quinoa in my recipes! It is easy to make, incredibly healthy and is a great size and texture for Baby Led Weaning. With ingredients like Quinoa and Spinach these Cheesy Quinoa Bites are super nutritious and they taste awesome. After seeing how much my little guy loved the first batch I made a second batch the next week and saved them in my freezer to have for quick and easy meals in the future. I hope you love these as much as my family did!
Why Quinoa?
Quinoa is a superfood, it has some amazing health benefits and is one of my favorite foods. Quinoa is rich in Protein and Fiber, two very important nutrients for our growing babies. It is high in important minerals such as Magnesium, Potassium, Zinc and Iron. I also love that quinoa is gluten-free so a great option if your little one has an issue with gluten.
Ingredients:
One Cup Quinoa
1/3 Cup Shreddd Cheddar Cheese
1/2 Cup Chopped Spinach
One Teaspoon Garlic Powder (Optional)
How To Make Them:
Let’s start by cooking our Quinoa. Get one cup of dry Quinoa, rinse it, then add it to a pot with two cups of water. Bring the water to a boil then turn down the heat and let it simmer for about 15 minutes. This will make more than you need for this recipe so save the rest for another time! Now we let’s turn on the oven to 365 degrees. While your Quinoa is cooking let’s chop our Spinach, you want to slice it super thin. Once the Quinoa is done add it into a large bowl along with your Spinach, Cheese, and Garlic Powder. Mix everything together. Once mixed get out a muffin tray, spray with a non-stick pan, then add in your Quinoa mixture, filling the molds about 1/3 of the way.
Cook this for 12-15 minutes and they are all done! Hope your little one likes them!!
