Let’s Make Some Chocolate Muffins (but let’s sneak some veggies in there)!
I’m a sucker for adding extra nutrition to the foods that my little one loves and I have to say this may be one of my absolute favorite recipes to sneak veggies into because due to the chocolate there is no way you can taste it. My son gobbled up his first chocolate muffin in minutes, he loved it! This is a really tasty and easy snack or dessert and definitely one I will be making again.
Reminder that this recipe has unsweetened cocoa powder which does have a small amount of caffeine, I personally have no issues offering these to my 16 month old as the amount in each muffin is incredibly minimal but just something to note 😋
Ingredients:
One Cup Grated Carrots
One Cup Spinach
One Large Ripe Banana
Two Eggs
1/4 Cup Oil
1/4 Cup Maple Syrup
One Teaspoon Vanilla Extract
One Cup Flour (Whole Wheat or Regular All Purpose)
One Teaspoon Baking Powder
One Teaspoon Baking Soda
1/4 Cup Cocoa Powder
Three Tablespoons (or more!!) Mini Chocolate Chips
How to Make Them:
In a food processor or blender combine your grated carrots, spinach, banana, eggs, oil, vanilla extract and maple syrup. Blend until smooth. Next add in your flour, baking powder, baking soda, and cocoa powder and blend again just until mixed. Fold in your chocolate chips. Add batter into your muffin tin, bake at 375 degrees for 20-23 minutes and enjoy!
