Let’s Make Some Dinner: Salmon!
I don’t eat salmon but I love cooking and trying new things so today I was super excited to try something I have never made before. This is Salmon with a cream sauce, spinach and cherry tomatoes. It smelled amazing, was so easy to make and my son and my husband both really liked it so I am going to say this one was a win! I love finding new ways to cook Salmon because it is so healthy and something that I try to give to my boys once a week. Bennett has been very inconsistent with salmon, sometimes he loves it and sometimes he doesn’t want to touch it so I have been on a mission to make it in a way that he would love it and I was so excited when he cleared his plate with this one! It’s a super easy recipe so give it a try and let me know your thoughts!
Ingredients:
Two Salmon Filets
One Cup Chopped Spinach
1/2 Cup Halved Cherry Tomatoes
Three Garlic Cloves Chopped
One Tablespoon of Butter
1/2 Teaspoon of Salt
1/2 Teaspoon of Pepper
One Teaspoon of Paprika
One Tablespoon Chopped Fresh Basil
One Tablespoon Chopped Fresh Parsley
1/3 Cup of Heavy Cream
1/4 Cup of Parmesan
One Tablespoon Olive or Avocado Oil
Optional: Lemon Wedge
How to Make It:
Start by prepping your Spinach, Cherry Tomatoes, Garlic, Basil and Parsley. Next season your Salmon Filets with your favorite seasonings I used Salt, Pepper and Paprika.
Add the filets skin side up into a pan on medium heat with about a tablespoon of Olive Oil. Cook for about 5-6 minutes. Flip and cook skin side down for 2-3 minutes. Take filets out of the pan and set aside. In the same pan add in your Garlic, one tablespoon of Butter, the Spinach and Cherry Tomatoes and some additional Salt, Pepper and Paprika. Next mix in the Heavy Cream, Parmesan Cheese, and the fresh Herbs. Add the Salmon back in and cook for an additional 3 minutes or until the Salmon is fully cooked.
