Let’s Make Some Fruit Fritters!
While I love super nutritious, savory fritters (check out my Lentil Fritters recipe), I am also a sucker for some sweet but still healthy fritters. These Fruit Fritters are a major hit in my house, my little guy eats them right up. They are soft in texture and sweet but have no added sugar so they are perfect for Baby Led Weaning. With only a handful of ingredients and minimal prep time these are very easy to make and I am confident your little one will love them. You can also adjust this recipe to your little one’s favorite fruits! Banana, Apple and Blueberries are our favorite but I have made these with Raspberries, Strawberries, and even Kiwis and they were all wonderful.
Ingredients:
One Banana
1/2 Cup of Oat Flour
One Apple *I prefer Gala or Macintosh
One Tablespoon of Thawed or Fresh Blueberries
One Lemon Wedge
One Tablespoon of Almond Milk *Or Milk of your Choice
Cinnamon
How to Make Them:
You can start by peeling and grating your Apple.
Add the grated Apple to a pan with some Coconut Oil and add in your Lemon juice, Almond Milk, and Cinnamon.
Cook for three to five minutes on low to medium heat then place the mixture in a bowl to cool.
Now in a seperate bowl you can mash your Banana and your Blueberries, then add in your Apple mixture and your Oat Flour.
Take a spoon or cookie dough scoop to place batter into small rounds on an oiled pan. Cook for three to five minutes on medium heat on each side.
