Let’s Make Some Fruity Oat Pancakes!
Anyone else’s toddlers go crazy for breakfast? Because I swear it’s the only meal of the day Bennett actually enjoys I’ve been trying to keep his breakfasts different everyday and these fruity oat pancakes were definitely a hit. I made a big batch and kept them in the fridge for an extra day which made breakfast easy. You can use any fruit to make these in addition to the banana, Bennett’s favorite adds are blueberries or raspberries.
Ingredients:
1 Banana, Very Ripe
One third cup Blueberries/Raspberries
1/2 cup Almond milk
1 Egg
1 1/2 cups Rolled oats
1 tablespoon Maple syrup
1 tsp Baking powder
1 tsp Vanilla
1 tablespoon ground chia seeds
How to make them:
First start with your dry ingredients so in a bowl I am combining one and a half cups of rolled oats, one tablespoon ground chia seeds and one teaspoon of baking powder. Next in a blender combine one ripe banana, a quarter cup of blueberries or raspberries, half cup of almond milk, one egg, one teaspoon of vanilla extract and one tablespoon of maple syrup and let that blend until smooth. Next add in your oats and blend again. Your batter is ready so now we can make our pancakes.
