Let’s Make Some Mini Apple Pies!

It’s starting to get chilly here in Northern California and I am definitely looking for some cozy fall sweets and one of my favorites is Apple Pie!


Ingredients:

- Two and a Half Cups of Diced Apples

- 1/4 Cup Brown Sugar

- Cinnamon

- Two Tablespoons Lemon Juice

- 1/2 Tsp Cornstarch mixed with 1 Tablespoon Water

- Pie Crust

- Two Tablespoons Melted Butter

- Two Tablespoons Sugar


How to make them:

Start by peeling your two apples, then dice them. In a small pot on medium heat, add your apples, lemon juice, brown sugar, cinnamon, and corn starch mixture (1/2 teaspoon corn starch with a tablespoon of water). Combine everything then turn the heat to low and let simmer for about 10 minutes. Once it’s done take it off the heat to cool. Take your store bought or home made pie crust and roll it out until it is a thin layer. Use a shape cutter or the rim of a glass to form your pie circles. Add a tablespoon of filling on the circle. On another circle, make an X shape with a knife then place it on top. Crease the sides using a little bit of water, seal with a fork. Before these go into the oven, top with melted butter (or you can use an egg wash) and a sprinkle of sugar. Bake at 375 degrees Fahrenheit for about 15 minutes. Enjoy!
