Let’s Make Some Pancake Bites Three Ways!
Bite sized food is ALWAYS better right?! These Pancake Bites are so simple, my little guy can’t eat them fast enough, and they store great in the freezer so perfect to add to your freezer stash. Breakfast has always been Bennett’s favorite meal of the day but it can be difficult to think of new ideas for his breakfasts, what I love about these Pancake Bites is that they are so easy to make the base but you can add in any mix-ins your little one enjoys! In today’s recipe I will show you three of Bennetts favorite Pancake Bite mix-ins: Chocolate Chips, Blueberries, and Cinnamon Apples.
Ingredients:
Three Cups Flour
Two Teaspoon Baking Powder
Two Teaspoons Vanilla Extract
Three Cups Milk of Choice
1/4 Cup Sugar *I use Coconut Sugar
Two Teaspoons Cinnamon
Optional Topping: 1/4 Cup of Mini Chocolate Chips
Optional Topping: 1/2 Cup Fresh Blueberries
Optional Topping: 1/2 Cup Diced Cinnamon Apples (Look through my site for my Cinnamon Apple Recipe)
How To Make Them:
Let’s start by preheating our oven to 400 degrees. Next we will make our batter, in a large bowl add three cups of Flour, two teaspoons of Baking Powder, two teaspoons of Vanilla Extract, two teaspoons of Cinnamon, 1/4 cup of Coconut Sugar and three cups of Milk (I prefer Almond or Coconut). Mix the batter until there are no large chunks then divide the batter into thirds. In our first batter I am adding the mini Chocolate Chips, in our second one I am adding half a cup of Blueberries, and in our third one I am adding in half cup of Cinnamon Apples. Once each batter is thoroughly combined add into an oiled mini muffin pan or mold and bake in the oven for about 15 minutes! Hope your little one likes them!
