Let’s Make Some Peanut Butter Coconut Snowballs!

I love easy and quick recipes and this is definitely one of the easiest ones I have shared. These taste great, have a super soft and easy to eat texture and are a great high protein snack for your kiddos. Especially at this time of the year when we are all busy getting ready for the holidays I thought it would be a good time to share some recipes that are quick, easy and perfect for your little ones to eat on the go. And if your little one is as obsessed with all things Peanut Butter as mine is they will definitely enjoy this one!

Ingredients:

· One Cup of Creamy Peanut Butter

· ½ Cup of Almond or Coconut Flour

· Three Tablespoons of Maple Syrup

· One Teaspoon of Cinnamon

· Optional: Half Cup of Finely Shredded Coconut

How to Make Them:

In a large bowl combine all ingredients thoroughly. Cover and place mixture into freezer to set for about 25-30 minutes.

Remove from freezer and use a large spoon or cookie dough scoop to make the Peanut Butter Coconut Balls. Optional: Roll the Balls in the finely shredded Coconut for extra flavor and texture. Store in the fridge for up to two weeks and enjoy!
