Let’s Make Some Pesto Chicken!
I saw a picture of Pesto Chicken on Pinterest and had to try and make my own for the boys! By the way if you ever need meal or recipe ideas (aside from coming to my page ;) Pinterest is my go to! I don’t like to follow recipes but I love to look at pictures of different dishes and then try to put something similar together. As I’ve mentioned before, my son doesn’t always eat meat very well so I have been trying to find recipes that he likes. While he loved the cheesy tomato that was on top of the chicken he still didn’t eat this one very well but I wanted to share anyway because my husband and mom loved it and it was such an easy dinner to put together.
Here's how I made it!
Ingredients:
* Two Chicken Breasts
* Two Tablespoons of Pesto
* Half Cup of Mozzarella Cheese
* One Tablespoon Olive Oil
* Four Tomato Slices
* One Teaspoon Lemon Juice
* ½ Teaspoon Salt
* ½ Teaspoon Pepper
* One Teaspoon Paprika
* Three Garlic Cloves Chopped
* One Teaspoon Oregano
How To Make It:
Preheat your oven to 415 degrees Fahrenheit. Place chicken breasts in oven safe dish and season with seasonings of your choice (I used Salt, Pepper, Paprika, Garlic and Oregano). Top Chicken Breasts with one to one and a half tablespoon of Pesto each. Add two slices of Tomato on each Chicken Breast. Cover each one with Mozzarella Cheese (I used about a ¼ Cup of cheese on each). Top with some Lemon Juice and a drizzle of Olive Oil then bake in the oven for about 25-30 minutes making sure the Chicken is fully cooked all the way through.
I served this with some French Bread and a side of Sauteed Broccoli.
