Let’s Make Some Potato & Veggie Bites!
These Potato and Veggie Bites are awesome and with mashed potatoes as a base they are easy to chew and perfect for Baby Led Weaning. This recipe is easy to follow and makes enough to serve now and save the rest in the fridge for another day. As always, I love feeding these bites to my little guy as an easy way to get him to eat some veggies. This recipe has Potato, Zucchini, Carrot, and Broccoli, lots of great veggies with some great nutrition for my growing boy!
I primarily chose the base to Potato for this recipe because of its texture, when steamed and mashed Potatoes can bake to be perfect for Baby Led Weaning, solid enough on the outsides that it holds its shape but nice and fluffy on the inside. Potatoes do have some great nutrients in them as well, Potatoes are a good source of antioxidants which will help boost the immune system. Potatoes are versatile and filling, a great one to use in Baby Led Weaning recipes!
One Medium Potato
1/3 cup chopped broccoli
Two Tablespoons of Flour
How to Make Them:
Peel, chop and boil your Potato for about 10 minutes.
While that is boiling, peel and grate your carrot and your zucchini. Then chop your broccoli into small pieces steam to two minutes then mash further with a fork.
Put all of your veggies in a paper towel or cheese cloth and press to get out the extra moisture.
Once your Potato is boiled, mash it and add in your paprika, garlic powder and your egg. Mix everything together and set aside.
Put your Carrot, Zucchini, Broccoli into a sauté pan with some olive oil on medium-high heat for three minutes. Take that off the heat, let it cool then add it into a large bowl with the Potato and Egg mixture. Now you can add your two tablespoons of flour. Once everything is mixed together, form mixture into little circles on a greased baking sheet and cook for 17 minutes at 415 degrees. Hope your little one likes them!
