Let’s Make Some Quinoa Fried Rice!

Anyone else have this problem of making way too much Quinoa every time? When I make Broccoli Quinoa Tots I need one cup of Quinoa but I have about two cups left over. I love Quinoa so I usually don’t have trouble finishing it myself but I wanted to try to make another fun Baby Led Weaning recipe with it. So I decided to make one of my favorite healthy meals Baby Led Weaning Friendly: Quinoa Fried Rice. I used to love Fried Rice and wanted a healthier version, so I started making it for myself at home with Quinoa instead of rice and tofu instead of egg and I loved it! To make a version that was baby friendly I used canned (no salt added) veggies instead of fresh so they were nice and soft, I chopped them further so the pieces were nice and small and I removed the Soy Sauce. Since my little guy eats Eggs I added back in the scrambeled egg to this recipe but kept in the tofu as well for some extra protein. Not going to lie this recipe took my little guy a couple tries to understand. It is a totally new taste and texture than what he is used to eating but after a couple tries he began to love it! I love this one because it’s an easy recipe to make for the entire family. You can make one large batch for the family, take out a portion for your little one once it is cooked then to the rest of it you can add Soy Sauce, Red Chili Flakes, even a little Sriracha if you like the spice!


Ingredients:

  • Two Cups of Cooked Quinoa

  • 1/3 Cup Green Onions

  • One Can No Salt Added Mixed Vegetables

  • One Egg

  • Half Block of Firm Tofu

  • Garlic Powder

  • Ginger Powder


How to Make it:

Let’s start by making our Quinoa. Take one cup of dry Quinoa and rinse it in a collander. Take that Quinoa and add it into a pot with two cups of water. Bring that water and Quinoa to a boil then cover it, bring the heat down and let it simmer for 15 minutes.

Now we can chop our Green Onions. I also like to chop the canned veggies further to ensure they are easy for my little guy to eat. Once all the veggies are chopped, we can get our egg cooking. We want that to be a soft scramble. Once that is cooked, add in your half block of tofu, I like to crumble my tofu ahead of time but you can also break it apart in the pan while it’s cooking.

Let the Tofu and the Egg cook together for a few minutes then add in your Veggies, Quinoa, and Seasoning. Mix everything together and let cook for five minutes then it is done! Let cool and serve.
