Let’s Make Some Salmon & Veggie Balls!
As someone who doesn’t eat any fish, I was a little bit hesitant to introduce salmon into my son’s diet. I did what so many moms do and read a bunch of scary stories of kids having allergic reactions to fish and thoroughly freaked myself out, so I put it off for a little while. At eight months I decided it was time to cook some salmon for my little guy and cross my fingers that he wouldn’t have a reaction to it. I started off with just a small amount of a cooked filet and it was clear instantly that he absolutely loved it and YAY no allergic reaction. After reading more about the health benefits of the fish I wanted to find different ways to serve it to him. I am a sucker for finding new ways to sneak veggies into my kids diet so I thought I could combine salmon and some veggies into a ball that would be healthy and perfect for Baby Led Weaning. After a couple of attempts I finally made a recipe that was easy and my little guy loved to eat it.
Why Salmon?
Salmon is a very nutritious food and it was the primary reason I was so eager to introduce it into my son’s diet. Salmon is an excellent source of protein which is essential as our babies are growing. In addition to protein, Salmon is rich in Omega-3 Fatty Acids which strongly support eye and brain development. I also love that Salmon contains B Vitamins (Vitamin B1, B2, B3, B5, B6, B9, & B12), these B Vitamins are extremely beneficial for your brain and nervous system. Lastly, I have to mention that Salmon is quite high in Potassium, Salmon actually has more Potassium per serving than the same amount of banana (who knew?)!
Ingredients:
One Large Raw Salmon Filet (Skin Off)
One Carrot
One Zucchini
One Medium Sweet Potato
Garlic Powder
Paprika
How To Make Them:
Start by pre-heating your oven to 375 degrees.
Peel and chop your sweet potato then steam it until it is soft (three to five minutes depending on the size of the sweet potato).
Chop your Salmon into large chunks and add it along with the Sweet Potato into a food processor. Add in your Garlic Powder and Paprika as well. Blend those together until smooth.
Peel your Zucchini and your Carrot then grate those into a large bowl. Add your Salmon & Sweet Potato mixture to your Zucchini and Carrot then mix everything together.
Once mixed you can start forming the balls and putting them onto a greased baking sheet then you can pop them in the oven for about 18 minutes.
