Let’s Make Some Spinach & Banana Pancakes!
Ok I get it, the sound of “Spinach Pancakes” may not be the most appealing. But trust me when I say, these Spinach Pancakes are a huge win for parents and the little ones. They love the taste and the bright green color and we love that our babies are eating some hidden veggies with their breakfast. I love making recipes that the whole family can enjoy and this is definitely one of them, I always make a couple extra of these Spinach Pancakes to sneak for myself or to just keep in the refrigerator for another day. These pancakes only have five ingredients and are super easy to make.
Why Spinach?
Spinach is a great one in terms of nutrition for babies and adults alike. One of my favorite benefits of Spinach for babies is that it helps keep the body hydrated due to the high amount of water in it. Spinach is also a high calcium food. Since it is so common for babies to have problems eating dairy, I love to find other sources of calcium and Spinach is a great one. Calcium is of course great for bone health, very important for our growing littles. As parents we are always trying to keep our little ones healthy and growing, Spinach not only has protein to support building muscles but it also has Vitamin K which can assist in keeping their immunity high.
Ingredients:
1/2 Cup of Thawed Spinach
One Egg *or 1/4 Cup of Applesauce to make them Vegan
1/2 Cup of Oat Flour
Four Tablespoons of Almond or Coconut Milk
Half of a Banana Mashed
How to Make Them:
Start by thawing your frozen Spinach. Add your thawed Spinach, your Egg and your Almond/Coconut Milk to a blender and blend until smooth. In a separate bowl add your Oat Flour, your half mashed Banana, and your Spinach/Milk.
Mix everything together. Put some coconut oil into a pan on medium-high heat and add in your pancake batter making small rounds. Cook the pancakes for about five minutes then flip and cook for a few minutes on the other side and they are ready to serve.
