Let’s Make Some Spring Treats!

I have been so excited for Spring and Easter this year and in that spirit I wanted to make a few of my favorite Spring Treats. Both of these are using my favorite ingredient in baking and cooking: Lemon! The recipes I am going to share today are easy to make and so delicious, first is a Lemon Olive Oil Cake and next are some Lemon Crinkle Cookies. These recipes are perfect for Easter and my little guy was a huge fan of both!

Lemon Olive Oil Cake:

Ingredients:

  • Two Cups All Purpose Flour

  • Two Tablespoons Lemon Zest

  • ¼ Cup of Fresh Squeezed Lemon Juice

  • One Teaspoon of Vanilla Extract

  • Three Eggs

  • One Teaspoon Baking Powder

  • One Teaspoon Baking Powder

  • One and a Half Cups of Coconut (or Regular) Sugar

  • One Cup of Milk of Choice (I used Almond Milk)

How to Make it:

Start by preheating your oven to 375 degrees Fahrenheit. Next you can combine your dry ingredients on a large bowl. Dry ingredients include the all-purpose flour, baking powder, baking soda, and sugar. Combine thoroughly. In another bowl combine your wet ingredients: lemon zest, milk, lemon juice, vanilla extract and eggs. Mix together. Now combine your wet and your dry ingredients. Once mixed, add batter into oiled cake pans. Bake these for about 30-40 minutes or until a toothpick comes out clean. Let cool and enjoy! Optional: for additional sweetness, top the cakes with a lemon icing by combining lemon juice and powdered sugar.




Lemon Crinkle Cookies:

Ingredients:

  • Two and 1/4 Cups All Purpose Flour

  • Two Thirds Cup Coconut (or Regular) Sugar

  • Two Tablespoons Lemon Zest

  • Two Eggs

  • Two Tablespoons Fresh Squeezed Lemon Juice

  • One Teaspoon Vanilla Extract

  • One Teaspoon Baking Powder

  • ½ Cup Softened Butter

  • ½ Cup Powdered Sugar

How to Make it:

Preheat your oven to 350 degrees Fahrenheit. Cream together your softened butter and the sugar with a hand mixer. Next mix in your eggs, lemon zest, lemon juice and vanilla extract. Combine again with hand mixer. Next you can add in your baking powder and flour. Once fully combined, cover and put cookie dough in the fridge to cool for two hours.

After the two hours, use a cookie dough to create small balls, roll each ball into the powdered sugar then add to an oiled baking sheet.

Bake for 8-10 minutes in the oven, let cool and enjoy.
