Let’s Make Some Strawberry Oat Bars!
These Strawberry Oat Bars are such an easy and delicious treat that is perfect for a Sunday morning treat or you can pair it with some ice cream for a delicious dessert. It is so easy to make and it will absolutely make your kitchen smell delicious!
Here's how I made it:
First we are going to take two cups of fresh strawberries that I sliced, adding those into a pot with maple syrup, cinnamon and corn starch. Also just adding a pinch of salt.
Combine everything together and bring it to a boil. Let simmer for five minutes making sure that you are stirring it frequently. Continue mixing until it has thickened. Set aside.
Now in a large bowl combine your dry ingredients so I have flour, oats, brown sugar, cinnamon and baking soda. Mix together then add in coconut oil and vanilla extract.
Once combined place about 2/3 of the mixture into a pan, you can place the remaining mixture into the fridge for now.
Pour your strawberry filing over the crust. Then top with the remaining crumble.
Bake at 350 degrees for 35-40 minutes
Let cool and enjoy!

• 1 1/2 cups oat flour or all-purpose flour
• 1 1/2 cup old-fashioned rolled oats
• 1/2 cup coconut or brown sugar
• 1/2 cup coconut oil
• 1 teaspoon vanilla extract
• 3 teaspoons ground cinnamon
• 1/4 teaspoon baking soda
• 1/4 teaspoon salt
• 2 cups strawberries
• 3 tablespoons pure maple syrup
• 1 1/2 tablespoon cornstarch
• One tablespoon Chia Seeds
