Let’s Make Some Sweet Potato Bites!

Sweet Potato is one of my little guy’s favorite foods, no matter which way I serve it to him he always eats it right up. I started to play around with doing a Veggie Pattie with the base being Sweet Potato and as expected he seemed to really love it. I of course had to throw in some extra nutrition in there, so I snuck in a handful of Spinach and it went with the Sweet Potato perfectly. These patties are easy to make, require minimal ingredients and are super healthy.

Why Sweet Potato?

Sweet Potatoes are an incredibly nutritious food, I give it to my little guy pretty much anywhere I can. Sweet Potatoes are a great source of Vitamin A and Vitamin C, both of which are extremely beneficial for supporting the immune system. Sweet Potatoes also have a healthy amount of Manganese, a mineral that helps your body to produce collagen which is great for bone health.

Ingredients:

  • One Sweet Potato

  • Handful of Chopped Spinach

  • One Egg

  • ¼ Cup of Breadcrumbs

  • Garlic Powder

  • Yeast Flakes

How to Make Them:

Start by peeling and chopping your Sweet Potato into small chunks then steam that for about five minutes.

Once your Sweet Potato is steamed, add it to a blender or food processor along with your chopped spinach, garlic powder and paprika and puree all of that until the mixture is smooth.

Now get that into a bowl, add in your egg and your quarter cup of breadcrumbs and mix.

Lastly, you can form this mixture into small patties and get them into a pan with some olive oil on medium heat, cook on each side for about five minutes and they are done.
