Let’s Make Some Sweet Potato Crackers!

I loved making the Chickpea Flour Crackers the other week so I was excited to try another cracker recipe, this time using Sweet Potato! Sweet Potato is one of those foods that Bennett used to devour and now he doesn’t care for it very much (I don’t like it either so I don’t blame him🤪) but it is incredibly nutritious so I loved the idea of using Sweet Potato purée in these crackers and it totally worked because he loved these!


I decided to add some cinnamon to these crackers because I thought it would go well with the sweet potato but you could also add some nutmeg or a pinch of ground ginger.  Recipe is below!


Ingredients:

- Two Cups Whole Wheat Flour

- One Teaspoon Baking Powder

- One Teaspoon Salt

- One Teaspoon Cinnamon

- One Cup Sweet Potato Puree

- Three Tablespoons Butter (I used Earth Balance to keep them Vegan)


How To Make It:

Combine the flour, baking powder, salt, and cinnamon into a bowl. Add in the cold butter, breaking it apart into small pieces with your hands. Then mix in your sweet potato purée. Preheat your oven to 350 degrees. While that is heating, roll your sweet potato dough into a thin layer (add extra flour as needed). Next, use a shape cutter to create your cracker shapes. Use a fork to poke holes through each cracker, add all crackers to a baking sheet and bake for about 20 minutes flipping them over halfway through and enjoy!
