Let’s Make Some Sweet Potato Hash Browns!
I love easy recipes, especially ones that my little guy devours and this is a perfect example! I have made a few recipes on this page using Sweet Potato for two reasons: 1) My little guy loves it and 2) Sweet Potatoes are incredibly nutritious. They are a great source of Vitamin A and Vitamin C, both of which are extremely beneficial for supporting the immune system. Sweet Potatoes also have a healthy amount of Manganese, a mineral that helps your body to produce collagen which is great for bone health.
Ingredients:
One Large or Two Small Sweet Potatoes
Two Eggs
1/4 Cup Breadcrumbs
Two Teaspoons Garlic Powder
One Teaspoon Parsley
How to Make Them:
Start by peeling and finely grating your sweet potato. Add that into a bowl then add two eggs, one teaspoon of garlic powder, one teaspoon of parsley and 1/4 cup of breadcrumbs. Combine everything. In a large pan add some oil or non-stick spray. Add in your hash brown mixture and form into patties. Cook on each side for about 5 minutes on medium to high heat.
