Let’s Make Some Sweet Potato Waffles!
Sweet Potato has always been one of my little guy’s favorite foods. I have a great recipe for Sweet Potato Bites that he loves but I wanted to find new ways to use Sweet Potato so I thought it would go great in a healthy waffle recipe! These are soft and easy for my little guy to chew and with only a few ingredients they are super easy to make. This recipe makes a large batch so you can save the extras in the freezer or cut the recipe in half to make a smaller amount.
Why Sweet Potato?
Sweet Potatoes are an incredibly nutritious food, I give it to my little guy pretty much anywhere I can. Sweet Potatoes are a great source of Vitamin A and Vitamin C, both of which are extremely beneficial for supporting the immune system. Sweet Potatoes also have a healthy amount of Manganese, a mineral that helps your body to produce collagen which is great for bone health.
Ingredients:
Two Large Sweet Potatoes
Two Eggs *Or 1/2 cup applesauce to make them Vegan
1/2 Cup Almond Milk
One Cup Oat Flour
Pinch of Cinnamon
Pinch of Nutmeg
How To Make Them:
Start by chopping and steaming your Sweet Potatoes, then puree them with your Almond Milk until smooth. Add your Sweet Potato Purée into a bowl with two eggs, one cup of Oat Flour, and your Cinnamon and Nutmeg. Thoroughly mix all ingredients together. Spray Waffle Iron with non-stick spray. Cook Waffle for three minutes. Let cool for at least 10 minutes and give to your little one to enjoy!
