Let’s Make Some Veggie Chicken Nuggets!
My son has been absolutely loving Chicken Nuggets lately and life has been pretty busy lately so I am usually just buying them frozen from the store. But today I thought it would be pretty great if I could add some extra nutrition into one of his favorite foods. So I took some veggies I already had on hand (Mushrooms, Carrots, and Spinach) and added them into some Ground Chicken and it worked great! I was able to create some great tasting Chicken Nuggets that my son loved and I love knowing there’s some extra goodness in there! Full recipe is below!
- One Pound Ground Chicken
- Two Eggs
- Three (or more) Garlic Cloves
- Avocado Oil (for Cooking)
- 1/2 Cup All Purpose Flour
- 1/4 Cup Parmesan Cheese
- 1/3 Cup Shredded Carrots
- 1/3 Cup Mushrooms
- Small Handful of Spinach
- Seasonings Used: Garlic Powder, Paprika, Salt, Pepper, Oregano
How to Make Them:
In a food processor combine the ground chicken, one egg, seasonings, garlic cloves, carrots, mushrooms and spinach. Blend until smooth. Get two bowls, one with one scrambled egg, one with half cup flour and some additional seasonings. Form Nuggets then dip into the flour, then into the egg, then back into the flour. Cook in some Avocado oil on medium-high heat until golden brown then flip and cook on other side until fully cooked. Ensure Chicken Nuggets are fully cooked before serving. Enjoy!
