Let’s Make Some Zucchini Fries!
As your little ones get older, you may notice that they are becoming increasingly picky. My son who used to eat anything and everything I offered him is now showing clear aversions to certain foods (mostly vegetables). This has forced me to find new ways to cook vegetables so that he will enjoy them. Zucchini’s used to be one of Bennett’s favorite foods and he hasn’t been eating it lately so I was so excited to try out these Zucchini Fries to see if he would enjoy them and he seemed to love them! These are healthy and have a nice crunch on the exterior with a soft and easy to eat interior. These can be made in the air fryer or in the oven (Air fryer gets them crispier faster). Ingredients:
Two Zucchini’s
2/3 Cup Flour
Two Eggs
One and a half Cup Panko Breadcrumbs
Two Teaspoons Garlic Powder
Two Teaspoons Paprika
One Teaspoon Italian Seasoning
How to Make Them:
Start by washing your Zucchini’s. Next we will chop our Zucchini’s into fry shapes. Prepare your three bowls, one with the flour, one with the breadcrumbs and one with the eggs. Divide your seasonings apart between the Breadcrumbs and the Flour and mix together. Whisk your eggs with a little bit of milk. Now coat your Zucchini pieces in some flour, then in the egg, then in the breadcrumbs.
Once all of the Zucchini is coated, you can cook them in the oven or in the air fryer. If you are cooking them in the oven you can cook them at 425 degrees Fahrenheit for 20-25 minutes flipping them over halfway through or you can cook them in the air fryer at 400 degrees for 10-13 minutes flipping them over halfway through. Once cooked, let cool and enjoy with ranch or ketchup.
